As if the world itself wasn't cruel enough

Today I was reading the Yahoo headlines and saw the blog of a 12 year old girl battling two types of cancer. The headline link is Anyhow, I went over to her site on youtube and as I was scrolling through the comments, I couldn't believe how cruel some people were being. Don't get me wrong, I'm not blind to cruelty, but towards a 12 year old dying girl? Really?? Isn't it cruel enough that she's been fighting for her life for so long and at such a young age? I don't understand why people, who knows how old, feel the need to post mean comments. I figure some just like to get a rise out of people, but go get it somewhere else. One thing my parents taught me was that if you don't have anything nice to say, don't say anything at all! How hard is that?

I realize this is just a random rant, but in any case, more people need to learn to keep their mouths shut. It is always easier to be mean and "brave" online because no one will confront you directly and you don't have to confront anyone either. *sigh* Karma people. Karma. Eventually, everything comes back full circle.

Berry muffin bread

It's a lot later than I hoped, but as I said earlier, we were into a serious baking session today.  I pinned a recipe on pinterest and usually, I just pin stuff with hopes of making it and never do. But this bread looked so delicious! I had it on my mind almost every day and today I finally woke up and said "I'm making that bread no matter what". And so I did. It calls for whole wheat pastry flour, but the store I went to didn't have any so I bought regular whole wheat flour and it still turned out delicious. Also, no fresh blueberries. A little disappointing, but at least they had some frozen berries. It was a mixed blend and it turned out pretty good. What do you think? And honestly, what really made this muffin bread so darn tempting was the butter in the picture. So fresh out of the oven, cooled but still warm, the kiddos and I slapped on some butter and indulged in our afternoon dessert. Yum!

Super quick Chilaquiles

Growing up in a border town, my understanding of lots of "Mexican" food has been adapted through almost Mex-Tex. Yes, I know it sounds confusing. But I feel like the food I grew up was authentic and yet, going to other parts of the country, others feel that their food from Mexico city is more authentic. Probably so. However, I'm used to mine. Ha ha. Off on another tangent. So, that being said, MY understanding of chilaquiles growing up was pretty much the same as enchiladas except in pieces. Actual versions say you have to cut up tortillas and fry them and more stuff. Well today we got caught up in baking and before you knew it we were all starving. So I put a bit of oil in the pan, tossed in a can of Old El Paso mild green chile enchilada sauce, tore up some corn tortillas and tossed them in there making sure they were well coated, then put in some shredded chicken that was left over in there. It took me about three minutes to make and heat. Here is the outcome:
When I served it, I just put some shredded cheese all over it and we were ready for lunch! I just made some quick mexican pasta with tomato sauce to go with it. Delicious. I'll be posting what we baked in a little bit. =) We will be indulging in that soon.

The tweaked cake version

So, as I said on Saturday, I didn't buy the right chocolates for the cake I was making and my double layer round cake was a no go. At least the double 10 in. cake was a no go. I instead did an 8 in. on top of a 10 in. cake and it left me a little room on the sides. Since the strawberries I bought were so tiny and the chocolates were also too small, I came up with a new idea. And viola! The new version of my  cake, which I actually ended up liking. =)

Since the cake was smaller and I had extra chocolates, I just added them around on the platter. Little hands and big alike, gobbled them all up. Just as an extra touch, I injected the cake with strawberry glaze (which I chopped fresh strawberries into). Delicious!

ERRors in Baking

So...I planned to make a cake for a friend on their birthday. I looked at tons of ideas and finally decided on doing a round double layer chocolate cake that I would wrap Kit-Kats around. Sounds great, right? Especially since their favorite chocolate is Kit-Kat. I went to the store, bought all the goods and even decided on two bags of chocolate just to make sure I have enough. As I take out the groceries and begin to mix my ingredients, I realize I bought mini chocolates which will not be tall enough to cover my double layer. Ugh, the frustration in my own error due to rushed, last minute shopping. Now, I have no time to go to the store and I don't want to get stuck with an extra two bags of chocolate so I have to put them to use. Hopefully I can come up with a plan to make a still delicious looking cake...with Kit-Kats.

Those "ugh" days

Somehow I manage to have quite a few of those "ugh" days. You know, the ones where you get up and the only place you want to go is back to bed. You shower, get ready, make breakfast, eat, and yet, it's still so bleh. I am addicted to coffee so I have already trained my brain into thinking that no coffee = no function. Our fridge is broken and I haven't replenished any cold foods like creamer. Yes, it's a food to me. In any case, I think the broken fridge has affected my daily energy; the true troubles of a food junkie. I grabbed a quick frappucino and found this motivational quote:

So even though the day is almost halfway through, I suppose it's never too late to start "doing". Happy Wednesday!

My long term organization salvation from: Practically Spent: 5-Year Planner

I'm what you can call scatterbrained, and that's a little bit of an understatement. My mind never stops going, but I always forget everything! Seeing it on paper was something suggested to me and I kept on searching goal websites and planning websites like crazy. I couldn't really find something so I started making my own. It just wasn't really functional for me so I don't go back to it and remember things! After a divorce, going back to school (still in school), new kindergartner this fall, new daycare, new job, AND renting a new house, I needed long term goals and plans ON PAPER. I was going through's website and came across this!! Wow! Thank you so much for sharing and thanks so much to Practically Spent ( for sharing this. I know it was posted a couple years ago, but my oh my, I already feel less stressed! I adjusted it to a four year plan for myself and changed it up a little bit based on my busier months. Here's mine, but take a look at her original one and adjust it for your own needs.
